STUFFED SHELLS 
1 lb. jumbo shells
2 lbs. ricotta cheese
2 egg yolks
1/2 lb. Mozzarella cheese, shredded
1/2 c. fresh Parmesan cheese, grated
1 tbsp. basil, chopped
1 tbsp. olive oil
Sauce
Salt
Pepper
Pinch nutmeg
1 tbsp. parsley, chopped

Mix together all except olive oil and shells. Boil water, add oil, cook shells 10 minutes. Drain well. Fill with spoonfuls of cheese mix. Pour some sauce in bottom of large baking dish, add filled shells on top, cover with sauce. Bake at 350 degrees for 30 minutes. Sprinkle with cheese.
