STIR-FRY ASPARAGUS | |
2 tbsp. peanut oil 2 lb. asparagus (or 2 pkg. frozen), cut diagonally in 2-inch pieces 1 lg. clove garlic, crushed 1 tbsp. minced gingerroot or 1/2 tsp. ground 1 tbsp. soy sauce 1 tbsp. water 1/2 tbsp. sugar Use wok, large skillet or electric fry pan. Heat oil until hot but not smoking. Add asparagus, garlic and gingerroot. Stir-fry 4 minutes or slightly tender. Carefully add soy sauce, water and sugar. Cover and simmer 2 minutes or until asparagus is crisp-tender. Serves 4. |
