STAY CRISP SLAW 
8 c. cabbage, cut with knife
2 carrots, shredded
1 med. green pepper, diced
1 med. onion, chopped
1/2 c. vinegar
1/2 c. sugar
2/3 c. oil
1 pkg. any flavor jello - lime works well
1 1/2 tsp. salt
1 1/2 tsp. celery seed, optional
1/8 tsp. black pepper
1/4 tsp. mustard seed, optional
1 c. water

Place cabbage, carrots, onions, and green peppers in a bowl. Sprinkle with 1/2 cup water and chill. Take remaining 1/2 cup water and dissolve jello.

Put sugar, vinegar, celery, and mustard seeds, salt, and pepper in saucepan. Bring to a boil. Add jello mixture, stirring well. Cool until slightly thickened. Beat in oil.

Drain water off of the vegetables and pour on the dressing; stir well. Can be served immediately or refrigerated. Stir occasionally. Stays fresh for several days.
