FISH FRITTERS 
1 1/2 c. flour
1 tsp. salt
1/8 tsp. black pepper
3 eggs, beaten
3/4 c. milk
1 tbsp. melted shortening
2 c. fish, cooked and flaked

Mix and sift the dry ingredients. Beat eggs; add milk and the dry ingredients alternately. Stir in shortening and drop by small spoonful into hot oil (375 degrees). Cook for 3 minutes. Serve hot with tartar sauce or lemon wedges.
