FAMOUS CHICKEN AND HOMEMADE
DUMPLINGS
 
1 broiler, roasting chicken or sm. hen
2 c. all-purpose flour
3 egg yolks
1 egg
2 tsp. salt
1/4 to 1/2 c. water
1 tsp. celery seed
Black pepper and salt

Wash chicken and put in large pot. Add about 3 quarts water, salt to taste and bring to a boil. Reduce heat and cook on low until tender.

Dumplings: Measure flour into mixing bowl. Make a well in center. Add egg yolks, egg and salt. Add water as needed to form stiff dough. Roll out paper thin; do not stretch. Sprinkle celery seed over dough and roll in; cut dough into 1 inch squares. Remove chicken from pot. Remove bones and cut up; set aside. Add enough water if necessary to measure 3 quarts. Bring to boil. Add dumplings and cook, covered, 12 to 15 minutes. Add pepper to taste.
