GENEVA'S NUTTY NOODLE CASSEROLE 
1/2 lb. fine noodles
3 tbsp. butter
1 c. chopped onion (use more or less to suit taste)
2 lbs. ground beef (good grade)
1 (4 oz.) can mushrooms (optional)
1 can cream of chicken soup
1 1/2 c. milk
1/2 tsp. salt
1/4 tsp. pepper
1/4 c. soy sauce
1 tsp. Worcestershire sauce
1/2 lb. Cheddar cheese, grated
1/4 lb. mixed nuts
1 can Chinese chow mein noodles (crisp)

Cook and drain noodles. Saute onion in large skillet in the butter until golden. Add meat and cook until browned. Combine mushrooms, soup, and the milk and add to meat mixture. Blend in spices, soy, and Worcestershire sauce. Mix well and heat thoroughly. Butter a 9x13 inch Pyrex dish and spread the cooked noodles over the bottom. Cover with meat mixture. Top with cheese.

Heat well in a 350 degree oven for 15 minutes until the cheese bubbles. Remove and top with crisp Chinese noodles. Then top with the mixed nuts. Return to oven for 10 more minutes of cooking time. Serves 10.
