ROASTED RABBIT 
1 field dressed rabbit
Chopped carrots
Chopped celery
Chopped green onions
Butter
Salt & Pepper
2 liters water
3 tbsp. salt

1. Soak field dressed rabbit in 2 liters of water and 3 tablespoons salt for 2 hours.

2. Rinse rabbit well and pat dry with paper towels.

3. Stuff body cavity with chopped vegetables.

4. Coat with butter and season with salt and pepper.

5. Fill bottom of broiler pan with water then place stuffed rabbit on rock.

6. Cover tightly with aluminum foil and bake at 325 degrees until tender, approximately 2 hours.

7. Remove foil and allow to brown for a few minutes.
