BUTTERSCOTCH PUDDING COOKIES 
1 box butterscotch pudding mix
6 tbsp. sugar
3/4 c. shortening
1 egg
1/2 tsp. baking soda
1 c. flour
1 c. oatmeal
1 c. coconut

Mix pudding and sugar. Blend in shortening and egg. Sift flour and soda and blend into shortening mixture. Add oatmeal and coconut. Drop by teaspoon and flatten with fork. Bake 350 degrees for 15 minutes.
