GRANDMA KELLER'S CRACKER PUDDING | |
2 qts. milk 1 1/4 c. cracker crumbs 3 eggs 1 tsp. vanilla 3/4 c. shredded coconut 1 1/4 c. sugar Salt (optional) Separate eggs. Heat milk, when warm add crackers. Beat egg yolks, sugar and salt in bowl. Add to milk and crackers. Add coconut and vanilla. Keep stirring so that it does not settle on the bottom of pan. Boil until thick, just a few minutes. If it gets too thick, add more milk. Pour into a baking dish. Beat egg whites until peaks form. Add four tablespoons sugar and mix until stiff. Spread on pudding. Broil until brown. Add colored sugar for decoration. |
