CLAM CHOWDER--MANHATTAN 
3 sm. cans minced clams
2 med. onions, chopped
1/2 green pepper, chopped
1/2 c. celery, chopped
6 to 8 med. potatoes, cubed
1 qt. tomato juice
Pinch of salt
1/2 tsp. black pepper
Dash of sage
Dash of thyme
Dash of cayenne

Brown onion, celery and green pepper in small amount of shortening, in large kettle. Add clams, drained, if desired, and potatoes. Cover with cold water and bring to a boil. Simmer covered until potatoes are tender. Add juice and herbs last 20 minutes.
