SOUTHERN CORN BREAD 
2 c. cornmeal
2 tbsp. flour
1 tsp. baking soda
2 eggs
2 c. buttermilk
2 tbsp. vegetable oil or bacon drippings

Put oil or drippings in 9 or 10 inch cast iron skillet and heat in 400-425 degree oven for 5-10 minutes or until hissing hot. Mix all other ingredients. Pour into hot skillet. Bake for 20-25 minutes at 400-425 degrees. 6-8 servings.

Tip: Substitute for buttermilk: 1 cup sweet milk and 1 tablespoon lemon juice or vinegar. Let stand 5 minutes.
