SWEDISH PROTEIN BALLS 
4 eggs, beaten
1 c. grated mild Cheddar cheese
3/4 c. whole wheat bread crumbs
1/4 c. quick oats, uncooked
1/2 c. chopped walnuts
2 tbsp. minced onions
2 tbsp. celery leaves, chopped
2 tbsp. cooking oil
Salt to taste
2 tbsp. chopped green peppers

Saute celery, green peppers, and onion in oil. Combine with other ingredients. Red food coloring (1/2 teaspoon) may be added. Make into balls or patties and brown lightly in oil. Pat in baking dish and cover with a mushroom or tomato sauce.
