FRUITY CHICKEN RICE SALAD 
4 c. cooked white rice
1 1/2 c. cooked, diced chicken breast
1 green pepper
1 red pepper
Small bunch green onions
3/4 c. snap pea pods
1/4 c. three berry vinegar
1/4 c. olive oil
Black pepper

Mix rice, chicken and cut up vegetables in large bowl. Pour vinegar and oil in a covered jar; shake to mix. Cover rice mixture with the dressing and stir. Season with fresh ground black pepper. Refrigerate for two hours or more before serving.
