PINTO BEAN PIE 
1 c. cooked pinto beans
1 sm. can coconut
1 c. chopped pecans
3 (unbaked) pie shells
4 whole eggs
3 c. sugar
1 tbsp. vanilla
2 sticks butter

Mash beans well (use juice). Beat eggs. Melt butter. Add all ingredients and mix well. Pour into 3 unbaked pie shells. Bake 45 minutes to 1 hour at 300 degrees. Makes 3 pies. Freezes well.
