FRESH APPLE CAKE BY GEORGE 
3 c. flour
1 tsp. baking soda
1 tsp. salt
1 1/2 c. vegetable oil
2 c. sugar
3 lg. eggs
2 tsp. vanilla
1 1/4 c. chopped pecans
2 c. fresh apples, finely chopped
1 tsp. apple pie spice or cinnamon, optional

Sift flour, soda and salt. Add oil, eggs (one at a time) and sugar. Beat until mixed. Dough will be stiff. Add apples, nuts, vanilla and spice, if desired. Grease and flour tube or bundt pan. Bake 1 hour and 20 minutes at 325 degrees.

TOPPING:

1/2 c. butter
1/2 c. dark brown sugar
2 tsp. milk

Mix topping ingredients in a saucepan. Bring to a boil and cook for 2 minutes. Pour over cake.
