SPANISH RICE & PEAS 
3 c. rice
1 green pepper
1 lg. onion
3 cloves garlic, chopped
Pinch of oregano
1 can gondulas
1 stalk celery
1 tsp. parsley
1 tbsp. capers
2 1/2 c. water
3 strips bacon
2 to 3 pkgs. aciote

Fry bacon, remove bacon and save oil. Add to oil chopped peppers, onion, garlic. Cook until a little tender. Add 2 1/2 cups water, oregano, gondulas plus water, chopped celery, parsley, aciote, capers, and bring all of this to boil. Add rice. Stir together slightly and cover pot with foil and place lid over foil. Cook on medium low light until done.
