TURKEY MARSALA
1/2 c. flour
1/4 c. grated parmesan cheese
1 lb. 1/4 in. thick turkey cutlets, rinsed
Salt to taste
Pepper to taste
Paprika to taste
2 tbsp. butter
2 tbsp. olive oil
Garlic salt or garlic powder to taste
1/2 c. Marsala wine
2 tbsp. fresh lemon juice
Lemon wedges for garnish

In a shallow dish, mix together flour and cheese. Sprinkle the turkey cutlets with seasonings. Dredge the cutlets in the flour mixture to lightly coat both sides, shaking off any excess. In a large skillet, heat the butter and olive oil over medium heat until butter is melted. Lightly sprinkle the pan with garlic powder. Cook the cutlets for 30 to 60 seconds on each side until they are lightly browned. Stir in the wine and lemon juice. Simmer for about 3 minutes. Garnish with lemon wedges.
