STEWED RED CABBAGE 
2 1/2 lbs. red cabbage
2 med. onions
3 med. carrots
1/4 lb. slab bacon
1 oz. butter
4 tart cooking apples
1 clove garlic
Bay leaf
2 cloves
3/4 tsp. grated nutmeg
Coarse salt & freshly ground pepper
2 tbsp. port
2 tbsp. red wine vinegar

Preheat oven to 300 degrees. Finely chop the cabbage. Chop the onions, carrots and bacon. Over the low heat, melt the butter and cook the onions, carrots and bacon until soft. Chop and add the apples and garlic. Add the cabbage and remaining ingredients, mixing well. Cover and bake for 2 1/2 to 3 hours. Serve hot. Serves 8.
