CLAM CHOWDER 
1/2 stick butter
2-3 tbsp. flour
1/2 lb. sliced raw mushrooms
4-5 chopped green onions
2 med. cubed potatoes
2 sm. cans minced clams
1 pt. half and half
1 pt. milk
Salt & pepper to taste

Melt butter in large pot and add flour. When butter foams white add mushrooms and onions, cook about 5 minutes. Then add potatoes and clams. Use some of the clam juice. Add half and half and milk. Add salt and pepper to taste. Cook until thickened and potatoes are done. If mixture isn't thickened, pour a small amount into a cup, add a couple teaspoons of flour. Mix until lumps are gone. Then add to chowder and mix. Serves 4.
