CREAM OF CAULIFLOWER SOUP | |
1 head cauliflower, cut in 1 inch pieces 3 c. milk 2 med. tomatoes, chopped 2 med. potatoes, diced 1 onion, chopped 1 tbsp. parsley 1 1/2 tbsp. dill weed Salt and pepper to taste 1 pt. light cream Steam cauliflower, tomatoes, potatoes, onions and seasonings in milk until tender (about 1/2 hour). Stir occasionally. Strain soup. Put chunks in food processor and puree. Put back into liquid, return pot to stove. Reheat with cream. Adjust seasonings. Serve with a sprinkle of grated Parmesan cheese on top. |
