SWISS STEAK 
1 1/2 lb. round stead
1/4 c. flour
1 tsp. salt
1/2 green pepper
Chopped parsley
1 tsp. pepper
3 tbsp. oil
1 lg. onion
1 sm. clove garlic, chopped fine
1 stalk celery
2 c. cooked tomatoes

Cut meat into serving pieces; combine flour, salt, and pepper. Lay meat on bread board and pound half flour mixture into it with edge of saucer or meat mallet.

Use other half on other side. Brown well, turning as necessary. Add remaining ingredients, cover, and simmer 1 1/2 to 2 hours until meat is tender.
