HONEY DIJON SALMON 
3 salmon steaks (about 2 1/2 x 4 inches)
2 tbsp. spicy Dijon mustard
1 1/2 tbsp. honey
salt and pepper, to taste
2 tbsp. lemon juice
1 tsp. lemon zest
1 tbsp. olive oil or oil of your choice or Pam spray

Preheat oven to 350°F. First wash off your salmon and if it has skin make sure you take it off, then set salmon aside.

Prepare a shallow baking pan with oil or non-stick cooking spray (Pam). Mix together Dijon mustard, honey, lemon juice and lemon zest in baking pan, spread in pan.

To your taste season salmon with salt and pepper. Rub salmon on both sides in the lemon Dijon mixture. Place the salmon in the pan and put in a preheated 350°F oven.

Bake at 350°F for about 20 minutes or until salmon flakes.

Best served with steamed wild rice and zucchini.
