VEGETABLE LASAGNE | |
2 tbsp. olive or salad oil 1 lg. onion, chopped 1 clove garlic, chopped 1 tsp. Italian seasoning 2 pkgs. chopped broccoli 1 can Cream of Mushroom soup 1 c. Parmesan cheese 1 egg 1 jar spaghetti sauce 1 c. heavy cream 9 Lasagna noodles, cooked 2 c. shredded Mozzarella Heat oil, add onion, garlic and seasoning. Stir in broccoli. Remove from heat. Stir in soup, cheese and egg. Set aside. In medium bowl, stir spaghetti sauce and cream together. Pour 1/2 of sauce mixture into baking dish. Arrange 3 noodles over sauce; spread with 1/2 of vegetable filling. Sprinkle with 1/3 Mozzarella. Repeat. Bake at 350 degrees for 40 minutes or until hot. Sprinkle with remaining 1/3 of Mozzarella. Bake for another 15 minutes. Let stand for 10 to 15 minutes before serving. |
