KEY LIME PIE 
1 env. gelatin
1/2 c. sugar
1/4 tsp. salt
4 egg yolks
1/2 c. Key Lime Juice
1/4 c. water
4 egg whites
1/3 c. sugar
8 oz. Cool Whip or whipping cream
Baked pie shell

Cook first 6 ingredients boils. Remove from heat and add 1 teaspoon grated lemon rind and few drops green food color and cool until it forms a little mound. I use pan of ice water. Beat egg whites add sugar and fold in Cool Whip. Then fold into first mixture. Put in baked 9 inch pie shell. Top with more Cool Whip if want.
