IMPOSSIBLE ZUCCHINI TOMATO PIE | |
2 c. chopped zucchini 1 c. chopped tomato 1/2 c. chopped onion 1/3 c. fresh grated Parmesan cheese, or feta 1 1/2 c. milk 3/4 c. Bisquick baking mix 3 eggs or equivalent egg substitute 1/2 tsp. salt 1/4 tsp. white pepper 1 tsp. summer savory 1/4 tsp. sage 1 tsp. parsley 1/2 tsp. celery flakes Heat oven to 400 degrees. Grease 10 inch quiche dish or pie plate, 10 x 1 1/2 inches. Sprinkle zucchini, tomato, onion and cheese in plate. Beat remaining ingredients until smooth. (15 seconds in blender on high.) Pour into plate. Bake until knife inserted in center comes out clean, about 30 minutes. Cool at least 5 minutes. 6 servings. |
