HOMEMADE SALAMI 
5 lbs. ground beef
5 tsp. Morton Tender Quick curing salt
4 tsp. coarsely ground peppercorns
2 1/2 tsp. mustard seed
2 1/2 tsp. garlic salt
2 1/2 tsp. smoked hickory salt

First day, mix all ingredients together. Put in bowl; cover and refrigerate. Next three days, knead one time each day. Fifth day, make rolls of meat and lay on broiler pan in oven. Bake 8 hours at 150 degrees, turning every 2 hours.
