PINEAPPLE GRIDDLE CAKES 
1 1/4 c. whole wheat flour
1 tbsp. baking powder
1 tbsp. sugar
1/2 tsp. salt
2 beaten egg whites
1 c. skim milk
2 tbsp. Puritan oil
1/2 c. drained crushed pineapple

Mix flour, baking powder, sugar and salt in a bowl. Combine egg whites, milk and oil. Add to dry ingredients. Add pineapple to batter. Cook on a hot, lightly oiled griddle. For variety, substitute 1/2 cup diced apple. Makes two servings.
