RHUBARB PUDDING CAKE 
1 c. sugar
1 egg
2 tbsp. melted butter
1 c. buttermilk or sour milk
1/2 tsp. salt
1/2 tsp. baking soda
1 tsp. baking powder
2 c. flour
3 c. diced fresh rhubarb

TOPPING:

2 tbsp. melted butter
1/2 c. sugar

Blend together sugar, egg, and butter. Beat in milk until smooth. Stir in salt, baking soda, baking powder and flour. Mix well. Stir in rhubarb. Pour in greased 9 x 9 inch pan. Combine topping ingredients and sprinkle on top of batter. Bake at 350 degrees for 45 minutes or until done.

VANILLA SAUCE:

3/4 c. sugar
1/2 c. butter
1/2 c. evaporated milk
1 tsp. vanilla

Mix ingredients and bring to boil. Cook 1 minute stirring constantly. Remove from heat and stir in vanilla. Serve sauce over cake.
