CUCUMBER SOUP 
1/4 c. butter
1 lg. onion, chopped
4-5 lg. cucumbers, sliced
2 bay leaves
2 lg. potatoes
1 bunch fresh spinach
5-6 c. chicken bouillon
Salt and pepper
1 tbsp. fresh lemon juice

Melt butter. Saute onions and cucumber until transparent. Boil potatoes and spinach. Mix both vegetable mixtures together and add other ingredients except lemon juice.

Cook 5 minutes; chill. Add and mix lemon juice. Garnish with a slice of thinly sliced cucumbers to each serving. Serves 8.
