MARY'S 12 BEAN SOUP 
1 c. beans
1 tbsp. salt
Ham hock, ham bone or piece of ham
1/2 big onion, chop into sm. pieces
3 pepper corns
1 bay leaf
1 pt. canned tomatoes
1/2 tsp. chili powder
A few sprinkles of garlic powder
1 tbsp. lemon juice
Salt & pepper to taste

Soak beans and salt in water overnight. Drain and rinse beans. To the rinsed beans add 1 quart water, ham hock or ham, onions, pepper corns and bay leaf. Simmer covered slowly 2 1/2 to 3 hours. Add tomatoes, chili powder, garlic powder, lemon juice, salt and pepper to taste. Simmer for 1/2 hour more. Before adding last 5 ingredients, remove ham hock or bone and cool. Congealed fat may then be removed. Serves 8.
