FRESH APPLE CAKE 
1 c. cooking oil
2 c. sugar
3 eggs
2 c. self-rising flour
3 c. chopped, fresh apples
1 tsp. vanilla
1 c. pecans or walnuts
1/2 c. seedless raisins
1 tsp. nutmeg
1 tsp. cinnamon

Combine oil, sugar and eggs. Beat well. Add flour and beat thoroughly. Add remaining ingredients. Stir to blend well. Turn batter in a greased and floured pan. Bake at 350 degrees for 40 to 45 minutes.

CREAM CHEESE FROSTING:

1 (3 oz.) pkg. cream cheese, at room temp.
3 tbsp. butter, softened
1/2 tsp. vanilla
1 1/2 c. 10x confectioners' sugar
Pinch of salt

Mix all ingredients together until smooth.
