YAM `N CRANBERRY CASSEROLE | |
1 (40 oz.) can yams, drained 12 oz. fresh cranberries 1 1/4-1 1/2 c. sugar 1 sm. orange, sliced 1/2 c. pecan halves 1/4 c. orange juice or brandy 3/4 tsp. cinnamon 1/4 tsp. nutmeg 1/8 tsp. mace Combine cranberries, sugar, orange slices, pecan halves, orange juice and spices in a 2 quart casserole. Bake uncovered at 375 degrees for 30 minutes. Stir yams into casserole. Bake until hot throughout, about 15 minutes. 8 servings. |
