PINEAPPLE CREAM PIE 
1 single pie crust
2 egg yolks
2 egg whites for meringue
3/4 c. sugar
4 heaping tbsp. cornstarch or flour
1 c. sweet milk
1 sm. can crushed pineapple including juice
2 tbsp. butter
1 tsp. vanilla

Bake single 8 or 9-inch pie crust. Set aside to cool.

In saucepan, combine 2 beaten egg yolks, sugar, cornstarch, milk, and contents of crushed pineapple (smallest can). Cook on low heat, stirring constantly, until mixture thickens. When thick, remove from heat, add butter and set aside to cool.

Prepare meringue. Add 2 tablespoons sugar and 1 teaspoon vanilla. Add filling and meringue to pie crust and brown meringue in medium hot 350 to 375 degree oven. When done, cool slightly. Enjoy!
