CRAB-STUFFED MANICOTTI | |
6 manicotti shells 1 c. plus 2 tbsp. low-fat cottage cheese 2 tbsp. minced garlic 1 tsp. onion powder 1 can crab meat, well drained 1 tsp. Italian spice 1 tsp. sweet hot mustard Salt and pepper to taste 1 tbsp. butter 4 tsp. flour 3/4 c. milk Few dashes bottled hot pepper sauce Cook manicotti according to package directions; drain. Rinse with cold water; drain. Combine cottage cheese, garlic, onion powder, crab, Italian spice, mustard, salt and pepper. In saucepan melt butter; stir in flour and a dash of salt and pepper. Add milk; cook and stir until thick and bubbly. Stir 1 tablespoon of sauce into crab mixture. Fill each manicotti with crab mixture. Place in a 10x6x2 baking dish. Stir hot pepper sauce into remaining white sauce. Spoon over manicotti. Cover; bake at 350 degrees for 25 minutes. Top with Parmesan cheese and serve. |
