MACAROONS 
1/2 lb. almond paste
3 beaten egg whites
3/4 tsp. vanilla
1 c. sugar

In a bowl combine almond paste, egg whites and vanilla. Blend in sugar thoroughly. Using a teaspoon, form individual cookies on lightly greased cookie sheets. Bake at 300 degrees for 25 minutes until lightly browned. Remove sheets to a rack. Let stand 5-10 minutes. With greased spatula, remove cookies carefully. Yield: 3 dozen.
