ESCALLOPED SQUASH 
1 stick butter
1 (8 oz.) pkg. cornbread dressing mix
1 can cream of chicken soup
2 c. mashed yellow squash
1/4 c. chopped pimiento
1 sm. chopped onion
2 tbsp. parsley minced
1/4 c. sour cream
1/4 tsp. black pepper
1/4 lb. ground meat, browned (opt.)

Melt butter and add to dressing mix. Spread half of dressing mix in 8" square baking dish. Lightly stir and mix remaining ingredients with fork and spoon over the dressing mix. Spoon other half of dressing mix over and bake at 350 degrees for 45 to 50 minutes or until bubbles through.
