WILD RICE SALAD 
1 pkg. UNCLE BEN'S® long grain wild rice (with seasonings)
1 can red kidney beans, drained and rinsed
1 green pepper, chopped
1 red pepper, chopped
1 bunch green onions, chopped
1 pkg. mushrooms, sliced
1 sm. can water chestnuts, rinsed and chopped

Cook rice according to package directions; let cool. Add remaining ingredients. Toss. Add salad dressing (1/3 cup olive oil, 2 tablespoons red wine vinegar, 1 chopped garlic clove) and mix well. Serve at room temperature or cool. Serves 6-8.
