CREAM OF BROCCOLI SOUP 
1 bunch broccoli, chopped
2 sm. onions, chopped
2 c. chicken broth
1 c. skim milk
1 c. Ricotta cheese

Place broccoli, broth and onion in a pot and cook until broccoli is tender. Place the Ricotta and milk into the blender and blend until smooth. When broccoli is cooked, ad half of the blender mixture and mix well. Put it all into the blender and blend for about five seconds. Serve warm.
