DOUBLE CHOCOLATE COOKIES 
COOKIES:

1 1/2 c. brown sugar
3/4 c. butter
2 tbsp. water
2 c. chocolate chips
2 eggs
3 c. flour
1 1/4 tsp. baking soda
1 tsp. salt

Combine sugar and butter in saucepan until butter is melted. Stir in water. Add chocolate chips; stir until melted. Beat in eggs. Sift together remaining dry ingredients. Gradually add chocolate mixture. Drop by heaping teaspoons on greased cookie sheets. Bake 350 degrees for 8 to 10 minutes. Cool. Sandwich together with Peppermint Filling.

PEPPERMINT FILLING:

3 c. confectioners sugar
1/3 c. soft butter
1/8 tsp. salt
1/8 tsp. peppermint extract
1/4 c. milk

Combine sugar, butter, salt and peppermint extract. Beat until light and fluffy. Blend alternately confectioners sugar and milk.
