HOMEMADE ROLLS
6 c. good lukewarm water
3 pkg. yeast, sprinkled on top
2 tbsp. salt
4 tbsp. sugar
4 tbsp. oil
5 lb. flour

Mix yeast and water until all dissolved. Add 2 tablespoons salt, 4 tablespoons sugar, 4 tablespoons oil. Stir ingredients until all well dissolved. Then add 5 pounds of all-purpose flour. Mix until all the flour is worked in.

Grease the bowl heavily with oil and close up tightly. Punch the dough down every 10 minutes for 1 hour. Knead every 10 minutes for 5 times, then knead and put in pan greased with shortening (not oil), and place a wet towel over the pan.

This makes approximately 40 rolls or 5 loaves of bread. Let the dough raise in the pan until it comes to the top of the pan, which takes approximately 1 1/2 hours. Bake the dough at 375 degrees for 45 minutes.
