EASY LASAGNA 
1 - 1 1/2 lbs. ground beef
2 c. diced tomatoes
1 (8 oz.) can tomato sauce
1 env. spaghetti mix
1 (12 oz.) can V-8 juice
10 oz. box lasagna noodles, uncooked
1 (6 oz.) carton cottage cheese
2-3 c. Mozzarella cheese
1/2 c. Parmesan cheese

Brown ground beef and drain. Mix together in a blender the tomatoes, tomato sauce and the spaghetti mix. After blending put this mixture in a saucepan and simmer for 15 minutes and then combine with the hamburger and V-8 juice.

Place 1/2 of the uncooked noodles in the bottom of a greased 9"x13" pan. Layer on 1/2 of the tomato-hamburger mixture, 1/2 of the cottage cheese and 1/2 of the Mozzarella cheese. Repeat all the layers and top with the Parmesan cheese. Cover with foil. Refrigerate overnight or at least a couple hours to let noodles soak in sauce. Bake 1 1/2 hours at 350 degrees. Let stand 15 minutes before cutting.
