RED VELVET CAKE 
1 pkg. yellow cake mix (Duncan Hines)
1 sm. pkg. vanilla instant pudding
4 eggs
1/4 c. Crisco oil
2 tbsp. vinegar
2 tbsp. cocoa
2 oz. red food coloring
1 c. water

Mix all ingredients together. Beat for 2 minutes medium speed. Bake at 350 degrees. Grease and flour 2 (8 inch) cake pans. Bake for 25 to 35 minutes.

ICING:

1 stick butter
1 (8 oz.) cream cheese
1 box 10x sugar (sifted) powdered sugar
Crushed pecans
1 tsp. vanilla

Cream butter, cheese, add sugar and vanilla. Add pecans.
