RAISIN FILLED COOKIES 
2 c. shortening
2 c. white sugar
1 c. brown sugar
4 eggs
2 tsp. vanilla
5 tbsp. milk
6 c. flour, sifted
2 tsp. baking soda
1 tsp. salt

Cream shortening and sugar, mixing well; add eggs, vanilla and milk. Sift dry ingredients into mixture. Combine and make 4 rolls. Wrap each individually in aluminum foil. Store in refrigerator until ready to bake.

Slice dough thin and place on greased cookie sheet. Add raisin filling and place another slice on top. Seal edges and bake 10 minutes at 375 degrees.

FILLING:

2 c. ground raisins
3/4 c. sugar
1 tbsp. flour
1 c. water
1 tsp. vanilla
1/2 c. chopped nuts

Mix well all ingredients, EXCEPT nuts and vanilla. Cook until thick. Add nuts and vanilla. Cool. Spoon onto sliced rounds as described above. You can use dates instead of raisins.
