URASATA FASOLAKIA FRESKA 
1 onion, chopped fine
1/4 c. butter
1 lb. fresh green beans, cut into 2 inch pieces
1 clove garlic, minced
1 tsp. mint leaves
1 tbsp. minced parsley
1/2 c. tomato sauce
1/4 c. water
Salt and pepper to taste

Saute onion in butter until golden. Add beans and saute, stirring constantly, until beans have turned bright green. Add remaining ingredients and simmer for 30 minutes.
