CAULIFLOWER/BROCCOLI/HAM AU
GRATIN
 
4 c. partially cooked fresh or 2 (10 oz.) pkgs. frozen, thawed and drained cauliflower and broccoli
1 1/4 c. chopped fully cooked low-fat ham
1 can (11 oz.) condensed Cheddar cheese soup
1/4 c. skim milk
2/3 c. Bisquick baking mix
2 tbsp. butter
2 tbsp. shredded low-fat Cheddar cheese
1/2 tsp. ground nutmeg

Arrange cauliflower and/or broccoli in ungreased rectangular baking dish 11 x 7 x 1 1/2 inch, sprinkle with ham.

Beat soup and milk with wire whisk or hand beater until smooth, pour over ham.

Mix remaining ingredients until crumbly; sprinkle over soup mixture. Bake until topping is golden brown, 20-25 minutes at 400 degrees. About 8 servings. Delicious dinner with salad and hot crusty bread.

You may use all cauliflower or all broccoli or both combined.
