JOJO'S BEST SALSA 
3 cans diced tomatoes
1 onion (any kind)
1 bundle of cilantro
1 garlic wedge
salt and pepper, to taste

In one large bowl, add drained tomatoes, diced onion and peeled and minced garlic. Wash cilantro, then coarsely chop all ingredients together.

Season to taste with salt and pepper. You can also pour all the ingredients into a blender or food processor to make a smoother salsa. Transfer to jars and chill for a few hours.

Cooks Note: If you've been accustomed to store bought rather than fresh salsa, you may prefer to "steam" the chopped onion in a small saucepan with a tablespoon of water for a few minutes before adding. We like to press several cloves of garlic through a garlic press, or process the garlic in a blender for the most flavor, and to avoid chunks in the salsa. Sometimes, we add a few drops of lemon juice or balsamic and a pinch of fresh, minced basil, since basil and tomatoes go so well together. In Summer, we like to use fresh, vine ripened tomatoes and minced green peppers for contrast!
