CHICKEN SALTIMBOCCA 
6 chicken cutlets
6 slices boiled ham
3 slices Mozzarella cheese, halved
1 med. tomatoes, seeded and chopped
Dried sage, crushed
1/3 c. dry bread crumbs
2 tbsp. Parmesan cheese
2 tbsp. snipped parsley
4 tbsp. butter

Pound chicken breast with meat mallet to 5 x 5 inches. (Works best if covered with plastic wrap). Remove wrap and place ham slice and 1/2 slice of cheese on cutlet (cut to fit). Top with some tomato and sprinkle with sage. Tuck in sides and roll up jelly roll fashion. Press to seal well. Combine bread crumbs, Parmesan and parsley. Dip chicken roll in butter and roll in crumbs. Place in shallow baking pan. Bake in 350 degree oven 40 to 45 minutes. Serves 6.
