CHEESY SCALLOPED POTATOES 
8 oz. American cheese, shredded (2 c.)
1/4 c. butter
1/4 c. flour
2 c. milk
1 tsp. salt
1/4 tsp. pepper
Approximately 5 med. potatoes, with or without skin
2 sm. yellow onions

Preheat oven to 350 degrees. In 2 quart saucepan, melt butter over low heat. Blend in flour. Add milk all at once stirring constantly until slightly thickened. Add shredded cheese. Season and continue to cook and stir until cheese melts. Remove from heat and spread half the cheese sauce on bottom of a shallow 2 1/2 quart baking dish. Meanwhile slice potatoes and onions fairly thin and arrange in baking dish, over cheese sauce. Spread remaining cheese sauce over top. Bake at 350 degrees for about 1 hour. May need to cover half way through.
