SPICY PINEAPPLE ZUCCHINI BREAD 
3 c. unsifted flour
2 tsp. baking soda
1 tsp. salt
1/2 tsp. baking powder
1 c. oil
2 tsp. vanilla
2 c. unpared shredded zucchini
1 can (8 1/4 oz.) crushed pineapple, drained
1 c. chopped nuts
1 1/2 tsp. cinnamon
3/4 tsp. nutmeg
3 lg. eggs
2 c. granulated sugar

1. Grease and flour 2 (8x4) inch loaf pans and set aside.

2. In medium bowl, combine flour, nuts, soda, cinnamon, salt, nutmeg and baking powder; set aside.

3. In large bowl beat at high speed eggs until frothy. Beat in 1 cup oil, sugar and vanilla. Beat until mixture is thick and foamy. Stir in zucchini, pineapple and flour mixture. Bake 1 hour at 350 degrees.
