BREAD PUDDING 
1 loaf best quality white bread, crusts removed
2 qts. heavy cream
12 egg yolks
7 whole eggs
10 oz. dark brown sugar
Pinch of salt
1 tbsp. pure vanilla extract
1/4 c. best quality bourbon
1/2 tsp. grated nutmeg
1/2 c. raisins

Beat cream and eggs together. Add salt, vanilla, nutmeg, bourbon and sugar. Mix thoroughly. Pour mixture over bread with raisins. Allow to soak for 30 minutes. Crush with hands. Sprinkle over with brown sugar. Dot with heavy cream. Bake at 325 degrees for 1 hour and 20 minutes.
